Secret Recipe: Dianthus Huckleberry Blintzes

Good morning, and happy Wondercrew Wednesday! Today’s Secret Recipe is inspired by some flowers I just planted… Dianthus (also known as “pinks”) have a warm spice fragrance with the unmistakable scent of cloves! Some varieties are more strongly scented than others, and the scent varies from strong clove to pumpkin spice to mixed clove and ginger to floral spiciness. Who knew that the warming spices of fall and winter could be found in the bright blooms of a spring garden?? 

If you think edible flowers are nothing more than a garnish, please allow me to change your mind. The spiced flavor of dianthus blossoms is an integral part of this incredible breakfast dish. 

This is the ultimate luxury breakfast. Tender gluten-free crepes are colored bright pink with antioxidant-rich pink pitaya powder, then wrapped around a ricotta filling and fried in butter, then topped with a deliciously decadent huckleberry sauce (made from the last of the freezer stash!) The finishing touch is a dollop of whipped cream subtly flavored with dianthus blossoms. It may sound like a strange cacophony of flavors, but trust me: it works. Something about the spiced clove flavor of the dianthus elevates the huckleberries to be even more enchanting, and this breakfast or dessert dish tastes as incredible as it looks.
